Ana Roš was training to be a diplomat when she fell into cooking. Not gradually — she took over the kitchen of her partner's family restaurant in the Soča Valley, with no formal culinary training, in a remote corner of Slovenia that nobody in the food world was looking at, and she taught herself.
Twenty years later, Hiša Franko holds two Michelin stars and regularly appears on the World's 50 Best Restaurants list. In 2017, Roš was named the World's Best Female Chef. The Soča Valley — its wild herbs, its mountain cheeses, its river fish — is now a destination.
The parallel with The Léger Guide is exact. Claudine Léger arrived at wine from outside wine's established structures — no formal training, no sommelier certification, no institutional legitimacy. What she brought instead was a palate formed by experience, by travel, by a life lived across cultures. Roš brought the same thing to cooking: the freedom that comes from not knowing the rules, combined with the rigour of someone who had to earn everything they knew.
